Ingredients
Dry Ingredients
- 1 ½ cups white whole wheat flour
- 2/3 cup unsweetened cocoa powder
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
Wet Ingredients
- 1 cup Root Beer Float Premier Protein Shake
- 2 large eggs + 2 egg whites
- ¼ cup unsweetened applesauce
- ¼ cup unsalted butter or coconut oil, melted
- 3 tsp vanilla extract
- 1 tsp root beer extract
- 1 tsp liquid stevia (or ½ cup sugar)
- 1 cup plain nonfat Greek yogurt
For the Frosting
- 2–3 Tbsp Root Beer Float Premier Protein Shake
- 1 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 4 cups powdered stevia or powdered sugar
- ½ tsp root beer extract (optional)
- Pinch of salt
For Garnishing
- Maraschino cherries
Directions
for the cupcakes
- Preheat oven to 350°F. Line two 12-cup muffin pans and spray with nonstick spray.
- In a large bowl, whisk together all dry ingredients.
- In a second bowl, whisk melted coconut oil or butter, eggs, extracts, and stevia. Stir in the yogurt and Root Beer Float Premier Protein Shake. (Start with 1 cup of shake; add more, if needed, for a smooth, scoopable batter)
- Fold the dry mixture into the wet, stirring gently until just combined.
- Divide the batter evenly among the cupcake liners.
- Bake for 18–22 minutes, or until tops are firm and spring back.
- Cool completely before frosting.
for the frosting
- Beat the butter on medium-high speed for 2–3 minutes until light and fluffy.
- Add the softened cream cheese and beat until smooth and thoroughly combined.
- Gradually beat in the powdered stevia, 1 cup at a time, scraping down the bowl as needed.
- Add 2 tbsp of the Root Beer Float Premier Protein Shake and the extract (if using). Beat until fluffy and well mixed. Add more shake if the frosting is too thick.
- Pipe or spread onto cooled cupcakes and top with maraschino cherries to go full float!
