Ingredients

Dry Ingredients

  • 1 ½ cups white whole wheat flour
  • 2/3 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt

Wet Ingredients

  • 1 cup Root Beer Float Premier Protein Shake
  • 2 large eggs + 2 egg whites
  • ¼ cup unsweetened applesauce
  • ¼ cup unsalted butter or coconut oil, melted
  • 3 tsp vanilla extract
  • 1 tsp root beer extract
  • 1 tsp liquid stevia (or ½ cup sugar)
  • 1 cup plain nonfat Greek yogurt

Directions

for the cupcakes
  1. Preheat oven to 350°F. Line two 12-cup muffin pans and spray with nonstick spray.
  2. In a large bowl, whisk together all dry ingredients.
  3. In a second bowl, whisk melted coconut oil or butter, eggs, extracts, and stevia. Stir in the yogurt and Root Beer Float Premier Protein Shake. (Start with 1 cup of shake; add more, if needed, for a smooth, scoopable batter)
  4. Fold the dry mixture into the wet, stirring gently until just combined.
  5. Divide the batter evenly among the cupcake liners.
  6. Bake for 18–22 minutes, or until tops are firm and spring back.
  7. Cool completely before frosting.
for the frosting
  1. Beat the butter on medium-high speed for 2–3 minutes until light and fluffy.
  2. Add the softened cream cheese and beat until smooth and thoroughly combined.
  3. Gradually beat in the powdered stevia, 1 cup at a time, scraping down the bowl as needed.
  4. Add 2 tbsp of the Root Beer Float Premier Protein Shake and the extract (if using). Beat until fluffy and well mixed. Add more shake if the frosting is too thick.
  5. Pipe or spread onto cooled cupcakes and top with maraschino cherries to go full float!
