Blueberry Power Muffins

Ingredients

Makes approximately 14 muffins
  • 2 scoop of Premier Protein® Vanilla Powder
  • 1 cup oatmeal flour
  • ¼ cup almond flour
  • 1 teaspoon cinnamon
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 4 egg whites
  • ½ cup Greek yogurt
  • 1 cup unsweetened applesauce
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 banana, mashed
  • 1 cup fresh blueberries

Directions

  1. Preheat oven to 350°F
  2. Place liners in muffin pan and lightly spray with Pam baking spray
  3. In a large bowl combine egg whites, yogurt, applesauce, honey, vanilla extract and mashed banana
  4. In a second bowl combine oatmeal flour, almond meal, vanilla protein powder, cinnamon, bak-ing powder, baking soda
  5. Combine wet and dry mixtures until smooth
  6. Fill each tin ¾ of the way full
  7. Place 6 fresh blueberries on top of batter
  8. Bake for about 15-20 minutes
  9. Store in the refrigerator
